Coffee flan

Combine 5 beaten eggs, 2 portions of condensed milk, 1 cup of strong coffee, 1 cup of milk and 1 teaspoon of cognac. Transfer the mixture to a mold. Cook over a bain-marie into hot oven for about 30 minutes.

Fried bananas with coffee and rhum sauce

For the sauce: combine 1 cup of flour, 2 teaspoons of baking powder, 1 teaspoon of salt, 1 of a cup of sugar. Sieve the ingredients then mix them with 1/3 of a cup of milk and 2 teaspoons of melted butter until a firm dough is obtained. In a saucepan on a low heat dissolve 1 cup of sugar. Blend slowly and add 1 cup and a half of strong coffee, 2 tablespoons of potato flour and another 1 cup of cold coffee. Once the ingredients are well combined, add them to the mixture previously prepared and bring to a boil, stirring constantly until it thickens. Remove from heat and add 2 tablespoons of butter and 2 teaspoons of rhum. Prepare the fried bananas as follows: soak 3- 4 pieces of banana into some beaten eggs and flour. Fry them in hot oil for 5 minutes until golden brown. Serve the fried bananas with the sauce.

Moka Ice-cream

4 servings: gr 150 of dark chocolate, 5 eggs, gr 70 of strong coffee, ml. 300 of cream, 2 tablespoons of coffee liqueur, gr 125 of sugar. Melt the chocolate on a bain-marie, remove from heat and add the egg yolks and the coffee. Make the cream whipped and combine with the coffee liqueur. In another bowl whisk the egg whites and gradually add the sugar. Combine the cream with the chocolate mixture and slowly with the beaten egg whites. Set in the freezer.

Coffee rolls

Mix gr 240 of flour, 2 teaspoons of baking powder and a hint of salt. Sieve the ingredients and blend with gr 60 of butter. In another bowl mix 1 cup of milk, 1 of cup of coffee, 3 tablespoons of molasses and some icing sugar. Combine the two mixtures to form a dough. Roll out the dough on a baking pan. Spread gr 60 of butter on it and spray with a tablespoon of chocolate powder and sugar. Roll it up and cut into slices. Place the slices on a baking pan. Cook for some ten minutes. 

Pyramid of coffee meringues

4 servings: 5 egg whites, gr 70 of instant coffee powder, gr 550 of sugar, ml 600 of whipped cream, gr 125 of sliced almonds, coffee chocolate chips. Stiffly beat the egg whites. Mix coffee with sugar and add to the egg whites whisking well. Pour the mixture into a pastry-tube and form some little meringues on a nonstick baking sheet placed on a oven dish. Transfer to oven for 2 hours at 120 until meringues are dry. Serve topping meringues with whipped cream and almonds

Coffee souffl

Melt some butter in a pan, add 2 tablespoons of tender wheat flour, 1 glass of warm milk, 2 cups of strong coffee. Blend for about 12 minutes and when the mixture is thickened let it cool. Stiffly beat 5 egg whites aside. Pour 5 egg yolks one by one and the egg whites in the mixture. Spread some butter in a molder and bake for about 30 minutes

Coffee cream puffs

Combine 1 litre of milk with a tablespoon of potato flour. Add 3 tablespoons of sugar and 1 little cup of strong coffee. Place over heat stirring several times with a wooden spoon. Add a tablespoon of butter and when the cream begins thinckening, toss into the bowl of a food processor until it cools. Prepare the dough for cream puffs as follows: mix gr 250 of flour, 2 egg yolks, 3 tablespoons of butter and 1 cup of lightly salted water. Roll out the dough on a work surface. Using an upside-down glass make many rounds of dough. Fill them with the cream previously prepared. Fold the round disks to make the edges meet by a light pressure and fry in abudant hot oil.

Brasilian pudding

4 servings: gr 50 butter, gr 25 flour, gr 50 sugar, gr 220 fresh cream, 1 glass of milk, 1 tureen of very strong coffee, 2 tablespoons of coffee liqueur. Melt the butter over heat, add the sugar and let it almost caramelize. Remove from heat and dilute with hot coffee and liqueur. Blend the flour with the milk and mix with the other ingredients, then add the cream little by little. Place the pan over low heat and let the creamy compound thicken. Remove from heat, stir again for about 3-4 minutes and keep in the fridge for about 2 hours.

Coffee and chocolate pudding

Melt gr 250 of butter together with gr 250 of sugar and blend them until they become a creamy mixture. Add gr 250 of grated chocolate, 1 full cup of very strong coffee and some cognac. Whisk to combine. Pour into a mold and set in refrigerator

Coffee egg-nog custard

2 servings: 2 egg yolks, 2 tablespoons of sugar, 1 cup of hot coffee for each egg used. Whisk the egg yolks with the sugar, then add the coffee stirring constantly. Cook until thickened over a bain-marie. Serve hot or warm.

Coffee ricotta cake

Blend gr 250 of ricotta, 1 tea-cup of milk until foamy. Add gr 100 of sugar, 3 cups of very strong coffee, 1/2 cup of rhum, 4 chopped short-pastry cookies, one little piece of chopped candied citron. Pour the mixture into 6-8 goblets, garnish with coffee beans and freeze in the refrigerator. Serve chilled.

Roast pork with coffee sauce

Pour in a pan 2/3 of a cup of strong coffee, 1/3 of a cup of butter, 2 teaspoons of English sauce, one teaspoon and a half of mustard, one tablespoon of lemmon juice and one tablespoon of sugar. Blend the ingredients over heat until the butter melts. Sprinkle part of this sauce on the roast pork while cooking and pour the rest of it in the sauce-boat to dress the roast slices.

Brasilian meat

Melt some butter in a saucepan together with kg.1.5 of small cubes of meat until it turns golden stirring occasionally. Add some water, 1 clove garlic, 3 onions very thinly sliced, 2 teaspoons of salt. Cover and let it cook until the onion is soft. Now remove the meat and onion from the pan leaving the sauce there. Add 1 of a cup of flour, 1 cup of dry white wine, 1 teaspoon of oregano, 1/2 teaspoon of pepper, 1 cup of strong coffee. Stir slowly until the sauce and the other ingredients thicken. Transfer the meat and the onion in the sauce and bring to a simmer.

Ham with coffee sauce

Conbine gr.40 of flour, gr 40 of butter and 1 litre of milk. Add 1 abundant hint of salt, 1 hint of sugar, gr 25 of mustard, 2 tablespoons of strong coffee. Blend the ingredients and pour the sauce in a heat-resistant pan. Place gr 750 of very little cubes of ham on the sauce together with 6 boiled sliced eggs. Put the heat-resistant pan over a bain-marie until you serve. 

Barley soup with vegetables and coffee

Brown finely minced onion and garlic in  a deep pot with oil and butter. Add chopped celery and carrots and stir.
Add peas and beans (both fresh or frozen, but not canned).
Leave it to gain flavour and add coffee. When the coffee is almost absorbed, add chopped ham.
Cook at low flame and then add barley and chopped potatoes.
Pour hot vegetable broth and then wait until it boils.
Complete  cooking by stirring often.
Add fresh olive oil and serve.

Ingredients for four people:
200 g perl barley
100 g celery
100 g red beans
200 g peas
150 g smoked ham
2 potatoes
1 onion
1 clove of garlic
3 olive oil spoons
20 g butter
1 strong coffee cup
sufficient vegetable broth
sufficient olive oil

Stewed beef with coffee and curry

Let melt some butter in a deep pan.
Add garlic and onion and let them brown for few minutes. Add curry paste, tomato, beef and coffee and a pinch of salt.
Cook for 15 minutes after it boils and stir it now and then.
Add potatoes and keep cooking until the potatoes will  be soft.
Sprinkle with parsley before serving.
